These muffins are delicious, dense like a brownie, but packed with protein, no sugar or conventional flour. Over 10 grams of protein, these muffins are a dessert I can totally get behind.
I found the original recipe on foodiefiasco.com and modified it to suit my needs and the way I eat.
It's a super simple recipe that doesn't take that long at all.
4 scoops of protein powder (this will influence the calorie and protein content, as well as the taste)
1/2 cup of coconut sugar
1/4 cup of coconut flour
1/4 cup of unsweetened cocoa powder
4 tsp baking powder
1 tsp salt
1 1/4 cup of chocolate cashew milk
10 squares of dark chocolate (I used 84% dark)
2 egg whites
1 1/2 tbs vanilla extract
Preheat oven to 350 degrees. Grease muffin tin with coconut oil, or use muffin liners. Combine the dry ingredients together. In a double boiler melt down 6 squares of the dark chocolate and then stir in the cashew milk. Remove from heat and stir in the rest of the wet ingredients. Add the dry ingredients to the wet in thirds, stirring well between. Spoon mixture into tins half full and add 1/2 of the remaining chocolate pieces (break them up or chop them to have enough) to the muffins, then top them with the remaining batter. Top that with the other chocolate chunks. Bake for about 20 minutes, and then let cool before removing from pan. Super tasty and makes 1 dozen.
